Dulce de Leche Banana Toffee Pie

Ingredients

Dulce de Leche

  • 1 14- ounce can sweetened condensed milk

Filling

  • 8 ounces cream cheese light is fine
  • ¼ cup brown sugar
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar

Pie Assembly

  • 1 8- serving chocolate cookie pie crust
  • 1 cup crushed chocolate-covered toffee bars or Heath bits
  • 2 bananas

Instructions

Prepare Dulce de Leche - Can be done ahead of time

  • Preheat oven to 425℉.
  • Pour sweetened condensed milk into a shallow baking dish, such as a pie plate or loaf pan.
  • Cover very tightly with foil making sure all sides are covered and sealed. Place the baking dish in a larger pan, such as a roasting pan or cake pan and place in oven. Fill larger pan with hot water until water level reaches about half way up the outside of the covered baking dish.
  • Cook for about 60-90 minutes and then carefully check. Color should be a light caramel brown. Continue cooking if necessary, checking every 15-30 minutes. The longer you cook, the darker and thicker it becomes.
  • Remove from oven and whisk mixture until smooth. Cool for 15-20 minutes.

Prepare Pie Filling

  • In a large bowl, combine the powdered sugar and heavy whipping cream. Beat with electric beaters until medium peaks form. Set aside.
  • In a medium bowl, beat the softened cream cheese and the brown sugar with the electric mixer until light and fluffy. Add the whipped cream and mix with the electric mixer until fluffy and combined.

Assemble Pie

  • Spread dulce de leche onto the bottom and up the sides of the cookie crust.
  • Cut the bananas into ¼″ slices. Lay the slices over the Dulce de Leche. Sprinkle with about ½ of the toffee bits and set aside.
  • Gently spread the prepared filling over the bananas and toffee bits and then sprinkle with remaining toffee bits (you can also sprinkle the remaining toffee bits over the top right before serving if you'd like them to stay crunchy). Chill for several hours before serving. Serves 8-10.
