Chocolate-Dipped Fruit Cones

Ingredients

  • 24 sugar cones
  • 1 3.5-4 ounce bar dark chocolate
  • 1 teaspoon coconut oil
  • 10-12 cups assorted fruit washed and chopped into bite-sized pieces (if necessary). Good choices are berries, fresh pineapple, kiwi, and mango.

Creamy Fruit Dip

  • 1 8- ounce package cream cheese light cream cheese is fine
  • ¼ cup brown sugar
  • ½ teaspoon orange extract
  • 1 cup whipping cream
  • ½ cup powdered sugar

Instructions

  • Break the chocolate into pieces and place in a microwave-safe bowl. Microwave for 30-second increments, stirring after each heating, until the chocolate is melted and smooth.
  • Dip the sugar cones, open-side-down, into the melted chocolate, turning the cone so the chocolate coats the entire edge of the cone. Allow to cool completely on a sheet of wax or parchment paper.
  • While the chocolate is cooling, use an electric mixer to combine the cream cheese, orange extract, and brown sugar until light and fluffy. In a separate bowl, whip the cream and powdered sugar until medium peaks form. Fold the whipped cream into the cream cheese mixture and combine well. Store in refrigerator until ready to serve.
  • Right before serving, toss the fruit together. If necessary, add a little sugar for sweetness (sometimes the berries can be pretty tart, although a good pineapple or mango can help sweeten them naturally). Portion the fruit into the cones and serve immediately with the dip on the side (or you can dollop it on top if you feel like people need help). Makes 24 cones.
